Salmon and Asparagus Foil Packs

This oven baked salmon in foil recipe is a winner. Low-carb, paleo, gluten-free and keto-friendly!

Ingredients:

  • 2 slices of salmon fillet
  • 2 tablespoons vegetable broth or chicken broth
  • 1 1/2 tablespoon fresh lemon juice, or to taste
  • 1 tablespoon of your favorite hot sauce (we used Sriracha)
  • 4 teaspoons minced garlic (4 cloves)
  • Salt and fresh ground black pepper, to taste
  • 3-4 tablespoons butter, diced into small cubes (or ghee)
  • 2 tablespoons fresh chopped parsley or cilantro
  • 1 lb medium-thick asparagus, woody ends trimmed

Directions:

1. To prepare the salmon recipe: Preheat your oven to 425ºF (220ºC). Cut 2 sheets of 14 by 12-inch (35 x 30 cm) heavy-duty aluminum foil then lay each piece separately on the countertop. In a small bowl, combine the ingredients for the garlic butter sauce: broth, lemon juice, and hot sauce.

2. Season both sides of the salmon fillets with salt and pepper and divide salmon onto the aluminum foil near the center then place trimmed asparagus to one side of the salmon, following the long direction of the foil.

3. You can adjust salmon seasoning with more salt and pepper, then sprinkle garlic on top. Drizzle the garlic butter sauce generously over the salmon fillets and asparagus.

4. Divide butter pieces evenly among the foil packets, layering them over the salmon and asparagus.

5. Wrap salmon foil packets in and crimp edges together then wrap ends up. Don’t wrap too tight – keep a little extra space inside for heat to circulate.

6. Transfer the salmon foil packs to a baking sheet and bake in the oven, sealed side upward until salmon has cooked through, about 9 – 12 minute.

7. Carefully unwrap the baked salmon foil packets then drizzle with more lemon juice and garnish with fresh parsley or cilantro and a slice of lemon. Enjoy!

Notes:

  • You can double the amounts of salmon fillets for a family meal.
  • In general, it is better to not overcook salmon fillets. If you like salmon and asparagus a bit crispy, just open the foil packs and broil the salmon in the oven for 2 minutes.
  • Asparagus can be thick and take longer to cook. You can blanch them first in boiling water for a few minutes before draining and baking in foil packs.
  • If aluminum foil is a concern, you can use parchment paper to make the salmon packets.
  • For non-keto dieters, a teaspoon of honey over the salmon fillets before baking is a must!

Shredded Mexican Chicken

Yes, this is really keto friendly! And also, the chicken would be awesome over cauliflower rice or wrapped in romaine lettuce leaves.

Ingredients:

  • 2 pounds boneless, skinless chicken thighs
  • 2 tablespoons taco seasoning
  • 1 (8-ounce) can tomato sauce
  • ½ cup (1 stick) salted butter
  • sliced jalapeño peppers
  • sliced red onions
  • chopped tomatoes
  • diced avocado
  • shredded cheese
  • sour cream

Directions:

  1. Place the chicken thighs in a 4-quart or larger slow cooker and sprinkle each thigh with the taco seasoning.
  2. Pour the tomato sauce over the seasoned chicken and top with the butter. Cook on low for 8 to 10 hours, until the chicken is tender.
  3. Shred the chicken with a fork and mix it with the liquid in the slow cooker.
  4. If desired, serve the shredded chicken with sliced jalapeños, sliced onions, chopped tomatoes, diced avocado, shredded cheese, and/or sour cream.

Lemon Garlic Butter Steak – One of the best keto dinners!

Delicious juicy marinated steak and zucchini noodles cook up together in just one pan for a quick low carb meal you’ll be crazy about. The marinade helps to tenderize and infuse the steak with savory flavor and links up the cooking juices into a sauce worth sipping by the spoon!

Ingredients:

  • 1 1/2 lb flank steak, sliced against the grain
  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 2 tablespoons butter or ghee
  • 1 lemon, juice and zest
  • 1/4 cup low-sodium chicken broth
  • 1/4 cup chopped parsley
  • Salt and fresh cracked pepper, to taste
  • 1/4 teaspoon crushed red pepper flakes

The steak marinade:

  • 1/3 cup low-sodium soy sauce (or coconut amino if you’re strictly paleo)
  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • 1 tablespoon Sriracha sauce (or any hot chili sauce you like)

Directions:

1. To make this steak recipe: Combines the ingredients for the marinade in an airtight container or a Ziploc bag. Add the flank steak strips into the marinade, seal and allow to marinate in the refrigerator for 30 minutes to one hour.

2. In the meantime, wash and trim the ends of the zucchini. Using a spiralizer, make the zucchini noodles, then set aside.

3. Bring the flank steak to room temperature and heat oil in a large skillet over medium-high heat — reserve the juices of the marinade for later. Add the steak strips in one layer and season with salt and pepper. Cook steak for one minute without stirring.

4. Add minced garlic, then stir the flank steak for another minute or two to cook the other side. Remove the grilled steak from the skillet and set aside to a plate.

5. In the same skillet, add butter, lemon juice and zest, red pepper flakes, chicken broth, and remaining marinade juices. Bring to a simmer and allow to reduce for 2-3 minutes, stirring regularly.

6. Stir in the fresh parsley, then add the zucchini noodles and toss for two to three minutes to cook it up. Allow the cooking juices to reduce for one minute if the zucchini renders too much water. Add the grilled steak strips back to the pan and stir for another minute. Serve immediately. Enjoy!

Notes:

  • Instead of broth, you can enrich the dish with dry white wine.
  • You can also cook your steak whole to the desired doneness, have it rest for a couple of minutes, then cut into strips afterward.
  • Zucchini tends to render a lot of water when cooking, so you can sprinkle with salt after spiraling and allow to sit for a couple of minutes to take off excess water. Rinse well to get rid of salt and drain thoroughly in a colander before cooking.

Ingredients For the Meatballs:

  • 1 lb ground beef
  • 1 clove garlic, minced
  • 1/2 cup shredded mozzarella
  • 1/4 cup freshly grated Parmesan, plus more for serving
  • 2 tbsp freshly chopped parsley
  • 1 large egg, beaten
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 2 tbsp extra-virgin olive oil

For the Sauce:

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28-oz.) can crushed tomatoes
  • 1 tsp dried oregano
  • Kosher salt
  • Freshly ground black pepper

Directions:

  1. In a large bowl combine beef, garlic, mozzarella, Parmesan, parsley, egg, salt, and pepper. Form into 16 meatballs.
  2. In a large skillet over medium heat, heat oil. Add meatballs and cook, turning occasionally, until golden on all sides, about 10 minutes.
  3. Remove from skillet and place on a paper towel-lined plate. To the same skillet, add onion and cook until soft, 5 minutes. Add garlic and cook until fragrant, 1 minute more.
  4. Put together tomatoes and oregano and season with salt and pepper. Add meatballs back to skillet, cover and simmer until sauce has thickened, 15 minutes. Garnish with Parmesan before serving.

Cheesy Bacon Ranch Chicken

A cheesy, bacon-y dinner makes this one of the best keto dinners.

Ingredients:

4 slices thick-cut bacon4 boneless skinless chicken breasts (about 1 3/4 lbs.)Kosher saltFreshly ground black pepper2 tsp ranch seasoning1 1/2 cup shredded mozzarella Chopped chives, for garnish

Directions:

  1. In a large skillet over medium heat, cook bacon, flipping once, until crispy, about 8 minutes. Transfer to a paper towel–lined plate. Drain all but 2 tablespoons of bacon fat from the skillet.
  2. Season chicken with salt and pepper. Return skillet to medium-high heat, add chicken and cook until golden and just cooked through, about 6 minutes per side.
  3. Reduce heat to medium and sprinkle chicken with ranch seasoning and top with mozzarella. Cover the skillet and cook, until cheese is melted and bubbly, about 5 minutes.
  4. Crumble and sprinkle bacon and chives on top before serving.

Ingredients:

  • 4 bell peppers, halved
  • 1 tbsp olive oil
  • 1 large onion, sliced
  • 16 oz cremini mushrooms, sliced
  • Kosher salt
  • Freshly ground black pepper
  • 1 1/2 lb sirloin steak, thinly sliced
  • 2 tsp Italian seasoning
  • 16 slices provolone
  • Freshly chopped parsley, for garnish

Directions:

  1. Preheat oven to 325º. Place peppers in a large baking dish and bake until tender, 30 minutes.
  2. Meanwhile, in a large skillet over medium-high heat, heat oil. Add onions and mushrooms and season with salt and pepper. Cook until soft, 6 minutes. Add steak and season with more salt and pepper. Cook, stirring occasionally, 3 minutes. Stir in Italian seasoning.
  3. Add provolone to bottom of baked peppers and top with steak mixture. Top with another piece of provolone and broil until golden, 3 minutes.
  4. Garnish with parsley before serving.

Ingredients:

  • 1/4 cup extra-virgin olive oil
  • 1/4 cup lemon juice
  • Kosher salt
  • 1 head cauliflower, leaves removed and stem trimmed so cauliflower lays flat, but still intact
  • 1 (10-oz.) package frozen spinach, thawed, water squeezed out and chopped
  • 2 large eggs, beaten
  • 4 green onions, thinly sliced
  • 2 cloves garlic, minced
  • 3/4 cup shredded cheddar
  • 4 oz cream cheese, softened and cubed
  • 1/2 cup panko
  • 1/4 cup grated Parmesan
  • 1 lb thinly sliced bacon

Directions:

  1. Preheat oven to 450°. Bring 8 cups water, oil, lemon juice, and 2 tablespoons salt to a boil in a large pot. Add cauliflower and bring back to a boil. Reduce to a gentle simmer and place a plate on top of the cauliflower to keep it submerged. Simmer until a knife easily inserts into the center, about 12 minutes.
  2. Using 2 slotted spoons or a mesh spider, transfer cauliflower to a small rimmed baking sheet. Let cool.
  3. Meanwhile, combine spinach, eggs, green onions, garlic, cheddar, cream cheese, panko, and Parmesan and place in a piping bag with a ¾-inch tip.
  4. Position cooled cauliflower stem side up on a rimmed baking sheet. Pipe filling between stalks of florets. Flip cauliflower stem side down, then lay strips of bacon, just slightly overlapping strips, over cauliflower, tucking ends of strips into bottom of cauliflower.
  5. Roast, rotating sheet halfway through, until golden all over, about 30 minutes.
