1 cucumber (cut on an angle) 1 bunch radishes 1/2 container cream cheese (goat cheese, feta, or cream cheese of your choice. You can even mix and match the cheeses) 1 package smoked salmon 1/4 red onion (small, thinly sliced) 1 teaspoon dill (or 2-3 tbs. Freshly chopped dill) lemon (optional) salt and pepper
Cut cucumber, radishes, and onion. In a bowl add cream cheese or cheese of choice, salt and pepper, and a splash of lemon juice. Spread the cream cheese mixture onto the cucumber slices. Add the onions, radishes, and smoked salmon. Garnish with chopped dill and enjoy.
11. Smoked Salmon Roses with Endive and Creme Fraiche
3 packages smoked salmon (thinly sliced)
8 ounces creme fraiche
3 heads endive (I used California Endive*)
1/4 red onion (small, diced)
2 tablespoons capers
Slice and roll up salmon. Wash and lay out the endives in a neat pattern. Chop the onions and make or buy creme fraiche. Add salmon, creme fraiche, onions, and capers to the endives. Serve and enjoy.
Homemade Creme Fraiche Recipe:
1 to 2 tablespoons cultured buttermilk
2 cups heavy cream
Combine the buttermilk and cream in a saucepan and heat only 85 degrees on a thermometer. Pour into a clean glass jar. Partially cover and let stand at room temperature (between 65 and 75 degrees) for 8 to 24 hours, or until thickened. Stir and refrigerate at least 24 hours before using.
You can also add chopped chives, tarragon, and some lemon juice if desired.

8 ounces yellow potatoes (or any potatoes of your choice) 8 ounces salmon (sliced cured or smoked wild Alaskan) 1/2 red onion (medium, halved and thinly sliced) 1 cup English cucumber (thinly sliced) 1 cup radishes (thinly sliced) 1/2 cup cherry tomatoes (sliced) 2 hard-boiled eggs (large, see Tips, peeled and sliced) 8 teaspoons salmon roe (wild, caviar) 8 teaspoons capers (rinsed) 1 lemon (cut into 8 wedges) 1 tablespoon fresh dill (chopped, plus dill sprigs for garnish) freshly ground pepper (to taste)
Steam, or boil potato slices for 4-5 minutes or until tender.
Add eggs to a pot with water, and allow to come to a boil. Let simmer for 10 minutes. Drain hot water and add cool water or ice to the eggs.
Allow the eggs to cool, and then peel and slice them. Slice and arrange onions, cucumber, radishes, lemons, and tomatoes on to a platter. Arrange all other ingredients neatly next to each other on the platter. Serve and enjoy.
On medium high heat grill sausages. Baste with BBQ sauce consistently. Let rest after cooking. Slice diagonally.
