If you like matcha, then this Healthy Matcha Green Tea Chia Seed Pudding is the recipe for you! It’s sweet and has got an amazing texture — smooth with a slight crunch in every delicious bite. The matcha is brightened up with almond extract. Perfect on its own or dressed up with coconut cream, strawberries, or grated white chocolate.

Ingredients:

  • 5 tbs Chia Seeds
  • 1 tsp Matcha Powder
  • 5 packets Natural Sweetener (stevia, Truvia, etc.)
  • 2 cups Unsweetened Vanilla Almond Milk
  • ½ tsp Vanilla Extract
  • 15 drops Almond Extract

Directions:

  1. In a shaker cup, add all of the ingredients. Cover with the cap and shake. Pour evenly into jars, seal tightly, and refrigerate overnight.
  2. Serve and enjoy!

Chocolate Cake!

This chocolate layer cake is rich, decadent and fudgy. And the chocolately cream cheese frosting makes it one of our new favorite quick Keto desserts—ever!

  • Cooking spray
  • 1 1/2 cup almond flour
  • 2/3 cup unsweetened cocoa powder
  • 3/4 cup coconut flour
  • 1/4 cup flaxseed meal
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp kosher salt
  • 1/2 cup (1 stick) butter, softened
  • 3/4 cup keto friendly granulated sugar (such as Swerve)
  • 4 large eggs
  • 1 tsp pure vanilla extract
  • 1 cup almond milk
  • 1/3 cup strong brewed coffee

For the Buttercream:

  • 2(8-oz.) blocks of cream cheese, softened
  • 1/2 cup (1 stick) butter, softened
  • 3/4 cup keto friendly powdered sugar (such as Swerve)
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup coconut flour
  • 1/4 tsp instant coffee powder
  • 3/4 cup heavy cream
  • Pinch kosher salt

Directions:

  1. Preheat oven to 350° and line two 8” pans with parchment and grease with cooking spray. In a large bowl, whisk together almond flour, cocoa powder, coconut flour, flaxseed meal, baking powder, baking soda, and salt.
  2. In another large bowl, using a hand mixer, beat butter and Swerve together until light and fluffy. Add eggs, one at time, then add vanilla. Add dry ingredients and mix until just combined then stir in milk and coffee.
  3. Divide batter between prepared pans and bake until a toothpick inserted into the middle comes out clean, 28 minutes. Let cool completely.
  4. Make frosting: In a large bowl, with a hand mixer, beat cream cheese and butter together until smooth. Add Swerve, cocoa powder, coconut flour, and instant coffee and beat until no lumps remain. Add cream and a pinch of salt and beat until combined.
  5. Place one cake layer on serving platter or cake stand then spread a thick layer of buttercream on top. Repeat with remaining layers then frost sides of cake.
  6. Keep refrigerated until ready to serve.

Ingredients:

  • 1 cup dark chocolate chips, melted
  • 1 medium avocado, mashed
  • 1/4 tsp Kosher salt
  • 1/4 cup cocoa powder
  • 1 tsp. vanilla extract

DIrections:

  1. In a medium bowl, combine melted chocolate with avocado, vanilla, and salt. Stir together until smooth and fully combined. Place in the refrigerator to firm up slightly, 15 to 20 minutes.
  2. When chocolate mixture has stiffened, use a small cookie scoop or small spoon to scoop approximately 1 tbsp chocolate mixture. Roll chocolate in the palm of your hand until round, then roll in cocoa powder.

Coconut Crack Bars

Ingredients:

  • 3 cups Shredded unsweetened coconut flakes
  • 1 cup coconut oil, melted
  • 1/4 cup monk fruit sweetened maple syrup
  • Can substitute for any liquid sweetener of choice

Directions:

  1. Line an 8 x 8-inch pan or 8 x 10-inch pan with parchment paper and set aside. Alternatively, you can use a loaf pan.
  2. In a large mixing bowl, add your shredded unsweetened coconut. Add your melted coconut oil and monk fruit sweetened maple syrup (or sticky sweetener of choice) and mix until a thick batter remains. If it is too crumbly, add a little extra syrup or a tiny bit of water.
  3. Pour the coconut crack bar mixture into the lined pan. Lightly wet your hands and press firmly into place. Refrigerate or freeze until firm. Cut into bars and enjoy!

Notes:

3-Ingredient No Bake Coconut Crack Bars can be kept at room temperature (covered) for up to 7 days. They can be refrigerated for up to a month and frozen for up to 2 months.

Keto Nuttella! – For Super Quick Keto Desserts

Yes you can now have “nuttella” on keto! Simply the best low carb chocolate hazelnut spread ever!

  • 3/4 cup hazelnuts toasted and husked**
  • 2 to 3 tbsp melted coconut oil can sub avocado oil
  • 2 tbsp cocoa powder
  • 1/2 tsp vanilla extract
  • 2 tbsp powdered Swerve Sweetener
  • Pinch salt

Directions:

  1. In a food processor or high-powered blender, grind hazelnuts until finely ground and beginning to clump together.
  2. Add 2 tablespoons oil and continue to grind until nuts smooth out into a butter. Add remaining ingredients and blend until well combined. If the mixture is very thick, add an additional tablespoon oil.

Recipe Notes:

** To toast and husk hazelnuts, simply spread on a baking sheet and bake at 350F for 10 minutes. Then rub the hazelnuts with your fingers (after they cool a bit!) to take of most of the husk. Some of it will not come off and that’s okay, just grind it all up. If you live near Trader Joe’s, consider purchasing their already roasted hazelnuts…makes your life even that much easier!

Easy and Quick Keto Desserts – Cinnamon Roll Mug Cake

Ingredients:

  • 1 scoop vanilla protein powder 32-34 grams
  • 1/2 tsp baking powder
  • 1 T coconut flour
  • 1/2 tsp cinnamon
  • 1 T granulated sweetener of choice*
  • 1 large egg OR 1/4 cup liquid egg whites see notes for Vegan option
  • 1/4 cup milk of choice I used unsweetened almond
  • 1/4 tsp vanilla extract
  • 1 tsp granulated sweetener of choice
  • 1/2 tsp cinnamon

For the glaze:

  • 1 T coconut butter melted
  • 1/2 tsp milk of choice
  • pinch cinnamon

Directions:

For the microwave option:

  1. Grease a microwave safe bowl with cooking spray and add the protein powder, baking powder, coconut flour, cinnamon, sweetener of choice and mix well.
  2. Add the egg/whites and mix into the dry mixture. Add the milk of choice and vanilla extract- If batter is too crumbly, continue adding milk of choice until a very thick batter is formed. Granulated sweetener of choice and extra cinnamon and swirl over the top. Microwave for 60 seconds, or until just cooked in the center. Top with glaze and enjoy!

For the oven option:

  1. Follow as above, but bake in the oven at 350 Fahrenheit for 8-15 minutes, depending on consistency desired- Mug cake is cooked once a toothpick comes out ‘just’ clean from the center.

Notes:

* Adjust according to taste- If protein powder is sweetened, feel free to omit completely. For the vegan option, you won’t need any flax eggs/egg substitute- Simply omit and slowly add milk of choice until a thick batter is formed. Microwave/bake until ‘just’ cooked in the center.
